IRISH SODA BREAD
Ingredients:
5 cups of flour
1 cup of sugar
1 tablespoon of baking powder
1 ½ tablespoons of salt
1 teaspoon of baking soda
1 stick of unsalted butter
2 ½ cups of dark raisins
2 ½ cups of buttermilk
1 large egg
Cooking Instructions:
1. Preheat oven to 350 degrees.
2. Butter skillet (This recipe requires a 12 inch cast iron skillet and cannot be substituted)
3. Blend the first 5 ingredients in bowl of mixer.
4. Add butter in pieces and blend well.
5. Mix in raisins, buttermilk and egg. Blend until well mixed.
6. Transfer to skillet.
7. Cut a 1 inch deep “X” into batter.
8. Bake for 1 hour and 15 minutes.
